Marathon Chicken Bake

Ingredients

1 ½kgChicken Thighs
4Potatoes
1largeOnion
4clovesGarlic
2tbspOlive Oil
1tspPaprika
1tspSalt
½tspBlack Pepper
2sprigsFresh Rosemary

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Cut potatoes into wedges and toss with olive oil, paprika, salt, and pepper.
  3. Arrange chicken thighs skin-side up in a large baking dish.
  4. Scatter potato wedges and sliced onion around the chicken.
  5. Tuck garlic cloves and rosemary sprigs between the pieces.
  6. Bake for 45 minutes until chicken skin is golden and crispy.
  7. Rest for 5 minutes before serving.
