Marathon Chicken Bake
A hearty one-pan chicken bake from Lizzii's cookbook. Perfect for meal prep or feeding a crowd.
Ingredients
| 1 ½ | kg | Chicken Thighs |
| 4 | | Potatoes |
| 1 | large | Onion |
| 4 | cloves | Garlic |
| 2 | tbsp | Olive Oil |
| 1 | tsp | Paprika |
| 1 | tsp | Salt |
| ½ | tsp | Black Pepper |
| 2 | sprigs | Fresh Rosemary |
Instructions
- Preheat oven to 200°C (400°F).
- Cut potatoes into wedges and toss with olive oil, paprika, salt, and pepper.
- Arrange chicken thighs skin-side up in a large baking dish.
- Scatter potato wedges and sliced onion around the chicken.
- Tuck garlic cloves and rosemary sprigs between the pieces.
- Bake for 45 minutes until chicken skin is golden and crispy.
- Rest for 5 minutes before serving.
